Talk Back To That Mean Miami Sun

We had organic beet juice from a bottle of the darkest liquid rubies you could imagine from Love Beets.

We had gin made by Ransom Spirits, so fresh and herbaceous that uncapping the bottle turned heads throughout the open kitchenIMG_0131

We had herbs from Gourmet Garden – they were bursting with such sunny flavor that for a minute I thought our setting (Miami) had been packed into tubes and little pots.

After two hours of intensive interviewing and hands-on multimedia story telling instruction with Betsy Andrews, Molly O’Neill, Libbie Summers and Shannon Kinsella, in the historic neighborhoods of Coconut Grove in Miami, Florida, we worked up a significant thirst.

Fortunately, in addition to great ingredients, we had consulting mixologists and at least a century of cocktail lore to draw from. And so this amazing rift on the classic Tom Collins and was born.

IMG_0141The Ginger Beet Collins recipe created for this special occasion by Dave Shenaut, bar director of Portland, Oregon’s award winning Raven and Rose featured the slightly sweet and earthy flavors of beet juice. The zingy ginger, and lemon complemented the highly aromatic gin made a refreshing cocktail with a zesty punch.

Inspired by the ingredients, Orlando Maisonnet from the DiLido Beach Club at the Ritz Carlton of South Beach also created an icy libation. The Royal Passion cocktail, an intense purple hue with a top note of fresh basil and a bass note of fresh ginger that, along with the beet juice, made a citrusy and earthy symphony in the mouth.

Makes 1 drink. Recipe scales up for a crowd.

1½ teaspoon simple syrup

½ teaspoon Gourmet Garden ginger

1 ounce Ransom gin

½ ounce fresh lemon juice

1 teaspoon Love Beets organic beet juice

Soda water

Lemon wheel

Muddle simple syrup and ginger in glass..

Add gin and lemon juice, and stir.

Fill glass halfway with ice, add beet juice, and top with soda water.

Garnish with lemon wheel.

   2 lemon wedges

   ¼ teaspoon Gourmet Garden basil

   ¼ teaspoon Gourmet Garden ginger

   2 ounces Ransom gin

   1 ounce Love Beets organic beet juice

   ½ ounce simple syrup

Muddle lemon wedges, ginger, and basil in shaker.

Add gin, beet juice, simple syrup, and ice, and shake.

Strain and add to chilled martini glass.
