Chef, champion of Food Network’s Chopped and winner of Slow Food’s coveted “Snail of Approval” award, Roxanne Spruance is known for her whole animal butchery and nose-to-tail approach to cooking that she practiced at Blackbird in Chicago, Wd50, and Blue Hill at Stone Barns. Her cooking at Kingsley combines both traditional smoking, charring, and pickling—with modernist, molecular techniques to create extraordinary flavor. The menu and cooking class she has designed for LongHouse— her final “chefs night out” before opening Kingsley in Manhattan—does just that!

COOKING CLASS: 4:30PM – 6:00PM

Learn from Roxanne how to break down two animals, a wild striped bass and a whole pig. We will fillet and then cure the striped bass and butcher a pig that has been spit roasted for eight hours.  Rounding out the class, learn to make an ingenious corn pudding and quick pickled peppers. 

DINNER: 7:30PM

After the hands-on cooking class, Roxanne will be serving a delicious Five Course Tasting Menu:

aji dolce peppers, nasturtium, black sesame

summer squash, sumac, yeast

sweet corn, chanterelles, watermelon, delfino

Chefs Night Out will take place at the LongHouse barn: 83 Stewart Road, Berne, NY 12023.

Transportation

BY CAR Located 2 hours and 40 minutes north of New York City, 3 hours west of Boston and about 40 minutes southwest of Albany by car. Those with cars are encouraged to drive. Free parking is available on Stewart Road.

BY TRAIN Those traveling from New York City can travel by train from New York Penn Station to Hudson, New York via Amtrak. From Hudson, taxi service is available to The Ararat Center (30 minutes) or to Chefs Night Out (50 minutes). Taxis from Hudson are available with Columbia Taxi, 518-822-1010, and are approximately $55 one-way to the LongHouse barn. To guarantee availability, we recommend booking train and taxi reservations in advance.

BY AIR The closest major airports are located in Albany (40 minutes by car), Hartford, CT (2 hours 15 minutes by car) New York City (2 hours 40 minutes by car) and Boston (3 hours by car).
